It's Only Natural

The Basic Health Maintenance Diet

The Basic Health Maintenance Diet, if followed faithfully, aids in restoring health where lost and in continuing good health in those so blessed.

First thing upon arising, take a full glass of warm water with a pinch of sea salt added. Half a lemon may also be added if troubled with constipation. One half hour later breakfast is taken.

Breakfast #1

Only fruit is taken. One may use as much as desired. The following are particularly recommended: apples (juice, raw, baked, or as sauce), apricots, bananas (very ripe), berries of all kinds ( best raw ), cantaloupes, cherries, grapefruit ( Indian River brand best),* grapes, lemons,* limes,* oranges,* papayas, peaches, pears, pineapples, coconut (fresh best, drink milk), plums, rhubarb,* tangerines,* and melons of all kinds. Dates, prunes, figs and raisins may be used if they cause no trouble, but they are more sugar than fruit and should be restricted during colds, flu, and similar disorders. (*These foods should not be used if you have arthritis, bursitis or related diseases.)

All fruit should be washed well and rinsed, preferably in one of the products sold at health food stores, to remove chemical sprays. If at all possible, try to buy fruit from a private party or health food source so that it hasn't been sprayed. One of the following may be added to this breakfast, if desired or felt necessary: nuts, seeds, lean fish, or meat. These supply sustenance to the meal without disturbing the digestion.

Breakfast #2 (Non-fruit)

Although a fruit breakfast is recommended, some may find it insufficient at first, or they may want some diversification. The following may be used in this case.

Cereal. Any whole-grain product may be used. Wheatena, steel-cut oats, millet, mates, seven-grain cereal, and other such products.

Milk or Cream. Raw milk or cream is preferred. Some may be used on the cereal and the rest drunk. Cereal, coffee or herb teas may also be used.

Bread. Whole-wheat toast, whole-wheat or cornmeal (un-degerminated) muffins, whole-wheat waffles, pancakes, or cornbread may be used.

Raw Vegetables. Raw vegetables should be taken with the above because these foods are all acid-forming and raw vegetables are needed to control this condition. Raw celery or carrots are sufficient.

Dinner and Supper

Dinner and supper have similar construction. One meal (either dinner or supper) will be smaller than the other, but the type of foods used is not altered, only the amounts.

Protein

Provide only one protein at each meal (small portions of two proteins from the same group may be used). Proper proteins may be chosen from the following:

Group I Dairy Products. Milk (raw), buttermilk, home-made ice cream, cottage and natural cheese (no processed cheese), eggs (fertile if possible). The eggs may be soft-cooked, scrambled, or raw. If you have problems with congestion, use only the yolk.

Group II Meat or Fish. Lean beef, lamb, chicken, turkey, duck, and all organ meats. If possible, obtain meats from private parties who do not use chemicals in the animal feed or sodium nitrate as a preservative. Some health food stores also carry naturally-raised meat. All forms of fish are good; those from the sea are richer in essential elements than the freshwater fish; however, all types of seafood (such as clams, shrimp, and crab) are highly recommended as long as their purity of source and processing is assured. Fish and seafood contain less toxic substances than meats.

Group III Nuts and Legumes. Nuts, lentils, dried peas, beans, and seeds (sunflower, sesame) may be used but with caution because they are difficult to digest and must be used as directed at the end of this diet.

Starches

Have only one starch at each meal because more than one leads to overeating. Health-building starches should be chosen from the following:

Whole-wheat bread made only from the most natural ingredients. Make your own or use a whole-grain bread obtained from a health food store. Nutritious bread is one of the most important parts of a diet; be sure yours is the best. Aside from the staple bread, the following carbohydrates are recommended: baked potatoes, natural brown rice, unpearled barley, millet, steel-cut oats, and any products made from natural unrefined grains-for example, cornbread, whole wheat pancakes, waffles, and bran muffins.

A small amount of fat is useful in most diets. Real butter and soybean-lecithin spreads such as those found in better health food stores can be used. In cooking, only the following products should be used: cold pressed oils, such as peanut, soy, safflower, sunflower, and sesame. For solid shortening, butter or the soybean spread may be used. These fats may be more expensive than those in common usage today, but they may prevent diseases that could cost a thousand times more.

Vegetables

The rest of the meal should consist of vegetables. It is best if they make up at least half the bulk of the meal. This helps to normalize body chemistry. Half the vegetables should be raw. (If you can eat something raw, don't cook it.) If at all possible, try to obtain vegetables that haven't been sprayed with pesticides or grown with chemical fertilizers. The best vegetables are those fresh from the garden-yours or a friends Canned and frozen vegetables are allowed, but they are second best. Each meal should start with a raw vegetable; this is vital. Tomatoes and/or cucumbers should not be eaten with regular meals, only with other vegetables, meat or fish, not with starches or dairy products.

Additional Instructions

Some products used in food preparation are necessary but harmful. More healthful substitutes are available and should be used. A list of these follows:

Baking Powder: Use only Royal, Rumford, or special health food brands containing no aluminum salts.

Table Salt: Use sea salt from health food stores.

Corn Starch: Arrowroot flour or rice polishings.

Chocolate: Carob candy and powder (El Molino is best).

White Sugar, Syrups: Use only turbinado, uncooked honey, sorghum, Grandma's molasses, maple syrup, and maple sugar.

Desserts: Cakes, pies, and cookies can be made from unrefined foods but should be served as the starch for the meal and not afterward, as is usually done.

Coffee, Tea: Use the alkaline teas: alfa-mint, fenugreek, shave grass, clover, rose hips, dandelion coffee.

All foods should be simply prepared. If you avoid spices, the natural flavors soon will prevail, enabling your senses to appreciate their delicate but distinctive character. Natural spices in moderation are not condemned, however.

Don't eat fruit with regular meals, only for breakfast or as a snack between meals and at bedtime.

Nuts, dried legumes, and soy beans can be used by those whose digestion allows it, but they must constitute the only starch or protein taken at that meal.

Don't under any circumstances drink fluoridated water or use it in food. Buy bottled water if necessary.
